Spanish Bread Pudding: A New Way to Get Nostalgic
With a new year comes a new treat! Luckily, there’s no need to look far! All you need is to turn a nostalgic Filipino merienda staple into something uniquely modern!
Let’s transform the classic and nostalgic Julie’s Spanish bread into a delicious, sweet treat to show off during your New Year family gatherings and local festival potlucks!
Break it down, add some custardy goodness and your oh-so-delicioso pudding is ready for serving!
A SWEET BASE FOR PUDDING
Spanish bread is a bonafide bestseller, with its soft dough and sweet, buttery filling oozing out when served straight from the oven. This creamy center creates a rather unique base for bread pudding.
While traditional bread pudding recipes use less sweet breads like brioche or sourdough, the Spanish bread gives it a hint of sweetness for a uniquely original flavor.
Plus, it’s super quick to make!
INGREDIENTS:
NOTE: This recipe makes four (4) servings.
- 4 Spanish bread
- 3 eggs
- 250g Evaporated Milk
- 80g Granulated Sugar
- 1g Vanilla
- 4g Granulated Sugar for toppings (optional)
INSTRUCTIONS:
1. First, break the Spanish bread into smaller pieces, then set aside.
2. For the pudding mixture, whisk eggs, milk, granulated sugar and vanilla in a bowl until homogenous. Once finished, strain the mixture and transfer to a pitcher for easier pouring.
3. To assemble, add some broken Spanish bread pieces up to the middle of the cupcake mold. Then, pour the pudding mixture on top.
4. Repeat the same layering process for the other molders available.
5. Lay them out in a baking pan filled with water, then bake for 30 minutes at 160°.
6. Once fully cooked, remove them from the molders and they’re ready for serving!
ADDITIONAL NOTES:
- Optionally, you can sprinkle some granulated sugar on top, then heat it up with a blowtorch for a creme-brulee type crust.
- Fresh, softer bread may become too mushy when baked with the pudding mixture. Older, stale bread is actually better for achieving the right consistency.
- Research and experiment with other bread pudding recipes using Spanish bread as the base.

This is not how one typically has their Spanish bread, but we assure you it’s worth a try! When mixed with the sweet custard, the buttery base is irresistible, making every bite of it worthwhile.
So this year, make your New Year’s resolution to try out new things! You never know, this might just become your new potluck specialty!
